Because it doesn't happen every time, I would dismiss the throttle issue. I would guess the polestar software might need updating. If you have time on your hands and the temperature is agreeable, pull off the throttle body and give it a good clean.

I have found that when I am in high altitude, over 5,000ft, the turbo engine will almost stall during WOT from standing start - until the rpms get over 1500.
