How to replace '01 S60 heater hoses S60

How do the heater hoses release from the firewall connections? The engine ends appear to be clamped. I ordered new hoses to keep on hand, but is there something in the firewall connection that I should also keep?

Usually, the hoses are clamped to prevent the heater core from leaking all over the cabin. Check the heater core for leaks and if it does, do the easy replace.

Do you know if the S60 release for the end at the firewall is the same as
the 850?

I cannot verify if it is the same for your car. If it has the yellow plastic clips, I would suspect they are the same quick release clips. Volvo has a habit of keeping the same parts if they last a long time and are cheap to make.
