Does anyone know of a good quality rear seat cover for my '98 V70R? I'm ready to cover the entire backseat area in plastic before my kids destroy the interior.

Take a look at this website:
www.wetokole.com

They make seat covers out of a neoprene material like wetsuits and they can do them in a number of colors. They have stock patterns and I believe they do custom fits as well.
