Heat/AC has mind of its own or is possessed 850 1997

Heating and AC is inconsistent. With AC button clicked off and using manual settings it will still crank out cold air with dials turned all the way up or may blow heat with dials all the way down. Sometimes it starts out right then changes the other direction. The same inconsistencies will also occur when all settings are all changed to auto with AC button turned on. Shops indicate there could be an hour or more just trying to troubleshoot,is there a simple sensor or thermostat that might need to be changed?
