Another dumb oil capacity question 850 1995

What is the best time to check the engine oil? Last week I changed the oil and filter on this turbo engine. I poured in 5 quarts of 10W30, plus 8 ounces of Bar's seal treatment. I started the engine, the oil light turned off, and I shut down the engine. I waited a few minutes, more than 5 and less than 10. The car was in the garage so it was level. The dipstick showed to be exactly on the full mark, thank you.

After driving for 60 miles and still on the road, car parked for 5 minutes on level ground, I checked the oil again and it was down almost a quart. Same when I came home.

I checked it this morning, in the garage, engine not started for a few days, and the dipstick showed full??? WHAT IS HAPPENING?

The owners manual:
850 Turbo - 5.6 US qts. (5.3 liters)*
* Add 0.95 qts. (0.9 liters) if the oil cooler has been drained Capacity: 8 US qts (7.6 liters)

That is so confusing! I added 5.25 quarts with a filter change. The specs say that if the oil cooler has been drained, add another quart. That would be 6.6 quarts, so how did Volvo get to 8 quarts?
