Can an XC make it on sand/mud/brush like an SUV/truck? V70-XC70

I currently have a 2001 V70T5 which I like quite a bit. Its great for hauling the kayak around (try getting a kayak on top of a Ford Excursion). On several occaisions, though, I've had to park my car in the lot, way away from the water, while the SUVs pulled right down to the water's edge in the soft sand, mud, etc. As a long time sports car fan, I'm totally opposed to SUVs. That and their high roofline rule them out for me. I've heard the Subaru wagons are very off-road worthy and am wondering about the XC. Could an XC be used to drive on the beach and the soft stuff? Is it an SUV/truck substitute or more of a AWD car for light duty?
