Handbrake Adjustment - Parking Brake 850

Does anyone have any good tips on the best way to adjust the handbrake on these cars?

I just completed a brake overhaul on my car yesterday which included new rear disks, pads, hand brake shoes, etc, but the problem is I just can't get the ajustment of the parking brake right. To explain: I backed off the adjustor located under the centre console and followed the haynes manual instructions regards adjusting at the wheels but still I end up with too many clicks of handbrake lever or else the total opposite of shoes dragging too much.. If I could have 7 - 8 clicks of hand brake movement then this would be ok but UK MOT law states that it must be maximum brake application at 5 clicks.

What am I doing wrong? Appreciate any advice from those that know how to do this job.
