If I unplug this relay, I know the dinging will stop, but will anything else stop working, catch fire, explode, or have any other negative side effects?

No....no problem.
I've removed that relay on every Volvo that I've ever owned.

Well, double post or not that's good news. The one in my car is breaking/broken, so any time the door is open there's just a single long beep tone. It's awful.

Nope....Not a problem.

You just won't be reminded to do whatever that thing is supposed to remind you to do..........Take your keys? Close your door? I can'r remember because it's usually the first thing that I do when I get a "new" Volvo.
