Is is possible to leave the driveshaft and/or differential from a car with an automatic when doing a manual conversion. I heard that the driveshaft can be lengthened and shortened to work. Thanks.

the differential doesn't need to be changed, assuming you like the ratio.

Yes, you can have a driveshaft shortened and the yokes changed, but the cost is significantly higher than just using the correct shaft.
