engine diesels and idles rough 140-160

My 68 142 has recently undergone a head swap. It now has a B20-F cylinder head. My problem however is with the cooling system (the temp guage strays upwards when idling), the idle is quite rough and it diesels when I turn it off. (The carb is a weber dgv 32-36 and has larger idle jets). If somebody has advice I would greatly appreciate it.

You can cure the dieseling by slowing the engine down, cooling it down, and leaning the idle mixture. Generally speaking fast, hot and rich will cause dieseling.

Excessively lean causes the burn to be hotter and causes hot spots in the cylinder that can lead to dieseling too.
You are best off perfoming a complete tune-up to reasonable specs including a check of the carb float level and fuel pressure. Then take the rig to a dyno to tune the carb.
Excessive advance, carb out of adjustment (either rich or lean), flooding, and poor gas all lead to excessive heat and dieseling.
