I saw an add for 5gt container of Exon oil for $5 at Big Lots. I assume that they found there way there because of the age of the oil. Would it be safe to use it or does oil go stale on the shelf?

Motor oil has an almost indefinite shelf life.

Seeing how it took a few million years(*) for dinosaurs to decompose into the oil it is today, I doubt a few more years of aging would cause any issues.
