Hi,

Anyone able to tell me where the coolant temp sensor is located on my 1991 940 GLE 16V motor?

It is below the cylinder #3 intake manifold port. A black connector, comes out with a 19 mm socket, IIRC.
You can do this with little coolant loss if your quick with the wrench!
