Cleaning water pump mounting surfaces 200 1990

I'm going (hopefully) to do my waterpump today, and the one thing I am most trepidacious about is the one thing about which I haven't found the info I need.

How do I clean the surfaces the pump mounts to? I'm especially concerned about the surface on the head, which is where it's leaking. How do I clean it, and how do I make sure it's clean enough after I do?
