Motor stop when oil cap is out... 200 1983

Hi,
the last weekend I replace the exhaust stubs for my volvo 240 turbo 83, when I finish, I inspect all fluids and when the motor started I remove the oil cap from the valve cover and the motor stop. This issue happens too when I move the oil stick. What happen?, any advice?.
