Temp guage is sometimes high 200

I have a 1988 Volvo 240. I have found that sometimes the temp guage rises. It is rather radom. For instance, I can drive up a big hill and it may not go on. Then I got in the car after it sat in a parking lot for ten minutes and pulled out and it started to rise. I turned the heater on and the temp dropped. I think turning the heater fan on made it drop a little quicker, or made it drop. Given these problems, is this something that I could fix with a thermostat or?
