How hard a job question... 200 1993

I think my car needs a new coolant temp sensor. She idles up and down when fully warmed up. The car is well kept up and runs great. What would a shop charge part and labor ? Is this an easy job ? Code comes up sensor as well. My Hanes book isn't great for details in this area, Thanks
