Temperature spikes 200 1991

I am experiencing coolant temperature spikes with my daughters 240. Starts and runs fine with guage needle normally in the middle. For no apparent reason needle will rise and hang around the maxz line just below red. then drop back down for a while. No leaks, full expansion tank, electric fan engages, fresh belts...Thermostat and a flush? If so, what temp for upstate NY 87 or 92 degrees?
