Under-bonnet maintenance 700

I've just sent my carb off to be restored. Before I fit it back on the engine I would like to do any maintenance I can. I am going to remove the intake manifold to install a new heater and polish the manifold as good as possible. Also I'm going to replace all the PCV stuff. Are there any other little jobs I can do while I have access under the manifold? There are some sensors I can see. I think one is the knock sensor and the other is a temp sensor. Should I replace them or just leave them since they do work?

Another question I have is about the fan. My haynes manual says the fan is viscous coupled. Does this mean it doesn't have a clutch? The fan is very noisy. Though, perhaps it has always been noisy but I notice it more now.
