eratic thermostat 200 1990

Car overheated,replaced thermostat car still overheated.Maybe a bad thermostat,replaced it again. Car drove ok the first 10 miles than the thermostat started to climb than drop back to the normal range. Thermostat acted this way all the way home,up down,up down? It can't be a bad thermostat again can it? Thanks
