What's a good handling 195/65 or 205/60 all season (no snow) 200

I've decided to bring the 240 out of retirement. The 205/55/15 Kuhmo 712s that are on it are just too short in the sidewall for the 2.5 miles of washboards that the county calls a (dirt)road that I have to drive before hitting pavement.

It's been a while since I've bought street tires and when I did it was for smooth roads in So Cal, so any positive experience with a good riding semi performance tire that will not beat me to death will be seriously appreciated.

I know I'll give up some performance to get the sidewall flex needed but there's got to be a happy medium.

Expected tire life is not an issue, don't care if they go 15k or 50k as long as they are sticky and fairly smooth.
