Thermostat which degrees and question

I went to the local parts store and got a new thermostat and was wondering if it was the right degree for my climate i live in San Diego Ca the temp here is always around 60-90 all year the guy said that the lower temp is better, but i dont know it is 71' Wahler is this a good brand i have looked on the board and there is no metion of a 71' so i thaught i would post. by the way this is my first post hoping to hear back.
Just purchased 89 240 sedan with 310,000 runs just as good as my 90 sedan with 140,000 the thermost is for the 90 sedan temp goes hot once a week or so hoping that this is the problem.when i turn on the heater it is extmely hot even if the gauge is in the middle. just had timing belt, belts, seals and waterpump replaced so i thought i would replace the thermostat.
