Acceleration Hesitation, Fuel Regulator? 1800 1970

I have a '70 1800e that I'm bringing back to life as part of a 3-yr rolling
restoration. The problem I'm now working on shows up during acceleration.
When accelerating there is a "pause" at around 3k rpm. It feels like the
engine doesn't get enough gas for a second or two until it breaks past
this rpm and then is fine(e.g. engine continues to pull strongly up through
the acceleration curve). I've got all new fuel lines, filter, and fuel
pump. The FInjector internals have been cleaned with solvent/cleaner and
don't seem to be the problem. My concerns are the Fuel regulator (which
holds steady at 30psi when at idle) and the distributor contacts. I've cleaned
and checked the operation of the distributor contacts so I don 't think
that's the problem now either. Any thoughts on where to go next? How
can I check the performance of the Fuel regulator during the entire
acceleration cycle?
