Head work, resurfacing and valve job 700 1991

Machine shop has my replacement head for my B230FT. The shop said that it needs a valve job, but that the mating surface (where it mates to the block) is so flat and the finish of such high quality that is does not need to be resurfaced. They propose doing a triple angle valve job. There are two questions that arise from this:

1. Volvo says not to grind the exhaust valves due to stellite coating, grinding will cause loss of part of their heat resistance. Actually, one Volvo green manual says "exhaust" valves must not be machined, another Volvo green manual simply says "valves" must not be machined. They can only be ground-in against the seat with lapping compound, says Volvo. My shop wants to do a triple-angle valve job. Should I let them?

2. My shop says that the mating surface of the head is so flat, and the finish so good, that they recommend against resurfacing it. They say to just clean it very well and it will be fine. While it seems to be conventional wisdom that heads are always resurfaced, this does make sense to me. What do you guys think?
