To lap or to cut? 900 1994

Hi All
I have been perusing Stealthfti's site for ideas on a head I am rehabbing.

I am tempted to simply do as he suggests and "lap" the valves and seats but am wondering if I am being penny wise and pound foolish as the head is going into the shop for a cleaning and touch up shave of the surface anyway? I havent even asked the shop owner how much, but he has quoted me 55-75 for the cut, whats reasonable for a 3 angle grind? Thoughts?
