P/S fluid changeout 700

Never had an issue with my P/S but I dipped my finger into the reservoir and the fluid is very dark in color. Do I use dexron III 0r can I use plain ole clear power steering fluid?

What is the easiest method to change it out? Can I pull one of the hoses that lead to the reservoir and start the car and add to the reservoir fresh fluid while piping the old into a bucket? My question with this method is how fast does the pump pump the fluid? I reckon with it being hydraulic it may go pretty fast but I don't know for sure...Anyone out there done this?

My 740 is a 1989 non turbo 8 valve engine.
