Manual steering? 200

I have a power steering rack and have heard its possible to convert them to manual. What is the easiest way to do this and what would be the reason not to and to get a manual steering rack? Thankyou in advance and just FYI I dont exactly know how to reply to responses to posts but I will do my best :)
