Updated fuel injectors for 1800ES 1800

I am finally deep into a full restoration of a '72ES that I have had for many years. Body has been stripped down of wiring/lights/interior/etc. to merely sheet metal and glass, suspension has been media blasted/power coated and reinstalled with new parts, and the car is heading to the body shop this week.

The fuel system is being overhauled since the car probably has not run since at least the early 90's. Last registration sticker is from the mid 80's. Given today's gas often contains Ethanol, I obviously will be replacing fuel lines with stainless steel or other EtOH friendly material. Don't trust the old fuel pump due to its age, so that will be replaced with a modern pump. Same with the pressure regulator. Looking to have the tank cleaned/inspected/repaired, and perhaps coated to protect it from the EtOH.

Last major concern are the fuel injectors. I could have the old (original) injectors serviced, but who knows for how long these 48 year old injectors will last with EtOH running through them. Are there modern injectors that are EtOH tolerant and direct replacements for the old injectors?

Any direction on this would be quite helpful.
