Perplessing Overheating 200 1988

My ‘88 240 DL (225k) has erratic engine temp. The engine was over heating so I replaced the thermostat (generic) and repaired a leak in the water pump. Now every so often after a while the engine temp. shoots up almost to red and after turning the heat on full blast it drops down to barely a quarter of the way up. The radiator and the hoses are only two years old and the radiator is clean. The fan also appears to run just fine. What could the problem be? I ran out of ideas, thanks for your help
