Which thermostat to use, 191F or 197F? 200 1988

IPD offers two thermostats for the 200 series with different operating temperatures -- 191F and 197F. Which is recommended for a 1988 240DL? The car is in Dallas, which has plenty of days of 100F every summer. Does that matter?
