780 Burlwood dash trim 700 1989

It is time to strip and refinish the burlwood trim in my Bertone Coupe. The cracks in the finish lead me to think it is shellac, not varnish or polyurethane. It's the high gloss finish, not the matte type used later on.

If somebody can tell me what the correct finish is, and whether the wood was stained before finishing, I'd like to get started in time for the new dash (which has matching cracks).
