Replacing steering wheel 700 90

Is that a difficult or very stupid thing to do? There are a few wheels from OMP that I would love to bolt in, but I am completely unaware of the process. What is the procedure? Are there "Sizes" and such with sterring wheels as there are in tire wheels? Thanks for any tips and info!!
