Over heat..... please help.... 200 1987

I just install a new thermostat about 1 month ago every was fine.. until now...

The main reason I replace themostat because it often run it the red.. and come back down...

after I replace the new thermostat everything was fine untill past few day... when I go up hill not big hill temperature start to move up... when I go down hill it drop back down.... water level seem to be fine..

What could be the problem ????? the car have 250,000 miles on it...
