The AC is supposed to shut down on hills and acceleration. Basically anything over 3 or 5 psi of boost, as I recall. Perhaps yours is misadjusted or you go up a lot of long hills where you notice the cutoff or your AC is low on freon or R134a and is marginal even when it does work.
