Brake Pedal Feel 140-160

How does the type of brake pad used affect the brake pedal feel when stationary? I can understand the change under normal braking but I can't understand the difference while pumping the pedal while stationary.

Also my brake pedal will sometimes feel spongy while driving for the first application after say 10 mins crusing but feels perfectly normal once released and reapplied. It had been doing this before and after a brake fluid change/pad change. Any ideas?
