AW71 Trans Fliud Capacity 700

I have seached the FAQ and have yet to find what I am looking for, so I thought I would ask. If the AW-71 trans is drained, but not the torque converter, (essentially just pulled the plug) about how much fluid is being changed verses how much total should there be in the system. I have read that when flushing the system you need to have about 9 quarts on hand, but that doesn't tell me I should expect to replace X quarts if I just drained the pan. (Which I did to see the condition of the fluid.) Also on an '89 740 Turbo, when should it be checked? It appears that the stick says 90 degrees C., which would be warm, but should it be in Park, Neutral, or Drive. I guess the owners manual would say, except I just got this car and haven't gotten a manual for it yet. I have checked it a each way and it doesn't seem to make a difference, but I worry.

P.S. Also thanks for the replys about my engine noise, I guess it must be common and I will live with it.
