Why does my oil look like this? 700 1986

I have a 1986 760 turbo with 200 K miles, the engine is great, no complaints. Lately I have noticed something strange. When I check the oil, the dipstick is sludgy, looks like oil & water mix. Yet after I clean the dipstick and check it a few more times it comes out clean. When I change the oil after 3000 miles it is clean, not milky or anything. Obviously I am getting some water in the oil, but wouldn't that make all of it milky ? Anyone have any ideas ?
