new wiring harness on '80 242 GT 200 1980

Help! I would like to replace the wiring harness on my older 240 but am a bit intimidated having never done this before.

Although I am not a mechanic, I have replaced clutches, everything with brakes from resivoir to caliper, starters, driveshafts, oil pans, etc. so I do have mechanical experience and know how to work on cars (e.g. label all hoses, wires, etc. BEFORE you disconnect them... etc.)

About how long can I plan on this taking? I assume I will have to remove the intake manifold and probably some of the "stuff" that's under it to get to all the wiring...

If you have ever done this before please drop me a quick e-mail with your thoughts - thanks for your help!
