Wierd Question concerning the AC 200 1991

What do you do when the AC is tooo cold? I have done some insulation tweaks and stuff to the AC reciever in the engine bay, and now the AC blows at a temp of about 40 degrees when it is 100 outside, and I don't want to roll down the window and have humidity in the car. And ideas?
