My Temp Gauge wasn't lieing... . Now what? 700

My 740gle loves to run hot with AC. My mechanic let me borrow his thermomeater thing that you just point at an object and it tells you the temp. My temp gauge was almost to the red so I decided to give it a shot. The top of my radiator was about 217* I have an IPD 3 row radiator, water pump done in last year, 2 thermostats tried, 4 flushes and the condencer fan now on a swich(wich didn't do anything). A few months back a wrote a similar post, and someone had suggested that maybe my gauge was jessed messed up. Now I know that it is now due to the radiator temp and the fact that when I shut off the car that time 30 seconds later I had a nice overboil. Any suggestions are greatly appreciated. (can I run it without a thrermostat?) I love my brick, but it is killing me
