What does the thermocouple wire from the heater control valve do? 120-130 1967

What does the thermocouple wire from the heater control valve do? I replaced the unit but am lacking further ambition and don't want to route the new thermocouple wire into whichever mysterious place it goes in the heater. Do I need this thing? What does it do?
