Why Does Removing the Thermostat Solve Overheating? 200 1980

My brick's temperature gauge was just below the red line. I changed everything (fluids, hoses, temp gauge), to no avail. Finally, I removed the thermostat. No more overheating. Is this a real solution? Do I need a thermostat that's different than the 182 degree (new) one I installed? Do i need to adjust the timing?
