Proper Thermostat 1800 1970

What I'm interested in is what is the optimal operating temperature for the Fuel Injection system's water temp sensor? I know the coolant has to be up to a certain temperature for the FIto "mix" correctly. I'd like to assure that I reach that temperature but not go too far above it. Had a 180F in and that began to die...also thought it was a little on the low side. Only other option from my local parts store was a 192. That seems a bit high, per the guage, and with sommer coming. Have I answered my own question? 187? I feel like Goldilocks.
