1987 240 overheating? 200 1987

I recently purchased a Volvo. I bought the car on Friday and have driven it around, back and forth to work, ec. This morning, Sunday, we drove to church and noticed a odor, like hot, but could see nothing. After church, drove home, (a mile), left car idling, drove to get gas, and then off to work. I noticed the temp gauge getting close to red, so we pulled over,open the hood and checked things out. I noticed the coolant looked a little low so I drove to Autozone to purchase. In the meantime, I had turned the car off, and on the way to the Autozone I noticed the temperature had dropped. But i purchased some coolant and then replaced fluid up to the recommended line. Drove to work, worked for about 2 hours, and went to drive home. I had been on the road about 10 minutes, sitting at a stop light when I noticed "steam" coming out from underneath the car. Temperature gauge reads normal at this time. But still worried, drive to autozone and one of the guys comes out and looks it over. When he gets to the car, we see steam coming out from under hood but upon opening, cannot see any leaks, broken hoses, etc. Coolant level good, temp good but can smell coolant burning. Drive home, sits again for about 2 hours and I drive the the convenience store, on the way there, I notice temp going high. It never gets in the red zone but I stop, get milk and get back in car. Now temp looks normal. Check coolant again, no issue there. Am I losing my mind? I am a first time owner and really excited about it, but worried I might have missed something in the test drive and engine inspection. Help!!!!
