Why is a vacuum necessary in recharging A/C System 700

I'm replacing my compressor and retrofitting the Volvo 134a kit on my 90' 740 following the instructions contained elsewhere on the site. I have one question though. Why is it necssary to draw a vacuum on the system for almost an hour? Is it to purge the system of old refrigerant and contaminants?
