Cooling System Puzzler - Need Advice 200 1990

1990 245 - Engine temp gauge heads for the red. Shut off AC, turn on heater, and it quickly drops to mid-point on the gauge. I can then turn off the heater and turn on the AC, and everything functions normally. I just replaced the thermostat, which I did find bad, but the problem continues. I flushed the engine and radiator with a water hose, reinstalled with antifreeze mix.

I'm struggling with understanding how turning on the heater would make the thermostat open, since the heater hoses are at the back of the block. It seems obvious to me that the radiator is ok, since I can run everything as normal after the "heater trick" on a 95 deg day.

Any advice would be appreciated.
