surfacing flywheel... how far to go? Help? 700 1988

So I need to get my flywheel resurfaced. my 740 has a weird shaped flywheel... it almost looks like it has two mating surfaces. I need to get it machined but I don't know if they should machine both surfaces. Does anyone know if they should and how deep they should go? I mean, does it matter if the one surface is lower than the other?

my volvo has the five-speed transmission. From what I am told, I do not have overdrive, whatever that means.
