temp guage - head gasket leak? 120-130

My temperature guage has been cycling up into the red then 6-7 seconds later back to the middle; does this regularly once the car has been going for some time. It's not the thermostat since this has been changed twice.

I thought it could be a head gasket leak. Would this figure? The leaking hot gas makes the thermostat act falsely, but eventually frees up, and then the whole cycle starts again?

What's the best way to check for a HG leak, apart from a leak-down test?
