idle and temptrature developements 88 240 200

i have had some new unexplained problems lately

1st i have had to replace the mass air sensor/meter last week as it simply quit.
the old one had a seal on top covering an adjustment screw of some sort, the one i replaced it with from the local bone yard had the cover/seal removed, that said does this screw affect the idle or idle speed and is there a procedure i should use to adjust it NOTE: its been idling rough and low since i replaced it.

2nd in the last month periodically, for no apparent reason the temp. gauge will go almost to the redline area and i shut it off release some pressure and let it cool off. this doesnt happen with any frequency but it is frustrating. i have replaced the thermostat purged the coolant and replaced it with new coolant.

the questions are: should i start looking at the fan clutch or temp. sensor?

im lost havent been experiencing any transmission problems but could the transmission fliud cause a temrpature spike intermittantly?

im running synthetic oil and havent noticed any sludge, and i havent lost any coolant. i dont know,, if it were a water pump problem i would think it would overheat on a regular basis the same thoughts about the radiator as i saw no evidence of blockage/or crud when i hosed the system out. no oil in the coolant likewise no coolant in the oil.
