Hello Craig! Concerning SU vs. Weber, i would recommend using a set of twin Weber 45.
Theese will (correctly adjusted) give your engine better responce,horsepower and fuel mileage than SU´s.
SU´s may be easy to find, but responce and fuel mileage has never (rebuilt or not) been their strong side.

P.s. the sound of twin Webers while acceleration is quite nice too!
