As long as the weight of the car is on the lower A-arms, whether they're supported by tires, brake rotors or a floor jack, the springs are safe. You can remove the upper arms -- split the ball joints, or just unbolt the uppers from the upper arm.

Whatever you do, be very, very, very careful that the springs do stay at least partially compressed. If they come loose in an uncontrolled way, it's potentially lethal.
